In The Beginning…
In an oven in Florida the batter began to rise as the clock ticked on and on. Throughout the night the ovens stayed warm and the cheesecakes baked away, as the hours went on the air was warm and sweet with the aroma of dozens of cheesecakes cooling and firming in the cool air of the bakery. As the clock creep closer to day the Cheesecakes finished setting in the fridge and freezers getting ready for their debut in a few hours….
Over the next few hours the bakers slept on a couch waiting for their alarm to go off so they can begin their travels to the local farmers market! As the sun began to rise so did the planes landing at the near by airport which became the alarm of the morning and showing it was time to start the journey with the cheesecakes for the debut of a new business!
As the dawn became morning a small village rose from the pavement to crate a warm and friendly shopping experience for the local neighborhoods. The Sun was bright and high in the sky this Nov 1st Morning!!! As the customers began to arrive the samples were set up and passed out the crowds as we awaited their response and first reviews of the classic New York Style Cheesecakes!!!!
As we received positive feedback and customers started to take Slices to go and enjoy in the markets and also take home for later we were excited to see our dreams start to take shape and see that we had dessert that the public enjoys as much as we do at home!!!
But Then…..
As the Florida sun began to take shape in the sky bringing the Florida heat with it we found that our cheesecakes could not stand up to the Florida sun in these outdoor markets and began seeing customers come back with melted slices that we began to replace and advise them to take it home immediately. When the market is was we had discovered we had a problem we had to solve as we had 40 whole cheesecakes to figure out how to sell and provide a way to keep cold for transport. As we then packed up out refrigerated bag/Ice chest shifted and tossed most of our cheesecake into each other breaks and damaging most of the Cheesecakes.
With the positives and negatives of the day behind us, we remained hopefully yet little defeated by the sun and heat of Florida. That is when we sat down to figure out the issue and find another way to move forward and change the world of desserts!!!
Next we sat around a table and began the process of figuring out the solution to make cheesecake a perfect on the go treat for all! After few hours of discussion the table grew silent once the word JAR was spoken. Simple, Insulating, and easy to grab and go; after some trial and error we found the jar the would set us free and start of down a great road that lead us to today!
